Summer spaghetti with olive paste🌿
~> 500 gr. spaghetti
~> 100 gr. Black paste
~> 1 clove garlic
~> 6 tbsp. olive oil
~> 1 tbsp. lemon juice
~> 1 tbsp. oregano
~> Salt, pepper
Boil the pasta al dente in plenty of salted water, following the instructions on the package. Strain them and let them drain. Peel the garlic and and cook it with 100g of olive paste, mixing with 2 tbsp olive oil.
Put another 2 tbsp. olive oil with lemon juice and oregano and add them to the pulp, stir, season with salt and pepper. If you want, add a little pummaro (tomato juice).
Mix the pasta with the pulp and heat them on low heat. Serve immediately with grated cheese.
Salad with quinoa and olive paste 🌿
~> White Quinoa (100gr.)
~> 2 teaspoon black olive paste
~> 2 garlic clove
~> ½ dried onion
~> Parsley
~> 1 red pepper
~> Salt, pepper, vinegar, olive oil, ginger.
Cook the quinoa in boiling water for 10-15 minutes with a little salt. Drain well and leave it to get cool. Chop the garlic, onion, pepper and parsley.
Put in a bowl the olive oil, salt, pepper, vinegar and ginger, mix and then add the quinoa and all the chopped ingredients and mix well.
Finally add the black olive paste, stirring lightly.
